Learn how to cook in our fun and educational cooking classes. Our rotating menu of workshops has something for everyone — from Culinary Camp for Kids to regionally inspired meals to knife skills to pastry classes that present a variety of bread-making, confections and decorating techniques.
During the hands-on classes, our experienced Chef instructors will walk you through each step required to master that evening’s theme.
All camps and workshops are hosted in our professional kitchens at the Paterson GlobalFoods Institute (504 Main Street) in the Exchange District.
The Modern Tuscan Table

Most Tuscan food is based on peasant traditions and dates from a time when poverty was the culinary mother of invention. Chef Fabrizio Rosso will take us on a fabulous culinary journey. The evening includes samples of 5 dishes and accompanying beverage.
Noodle Pulling Demonstration

Watch XiaoFe Zu, owner of Dancing Noodle and Red River College alumni, work his magic in the Chinese tradition of noodle pulling – Lamian. You will be treated to a bowl of savoury noodle soup with one of XiaoFe’s three custom broths, his house-made chili oil and other toppings, hand-prepared dim sum and a beverage to complement the meal.
Noodle Workshop 1: Dough

Learn the basics of the Chinese art of noodle pulling – Lamian – starting with the dough. XiaoFe Zu, owner of Dancing Noodle and Red River College alumni, will show you how to make the dough using prairie durum wheat – the best in the world – and various kneading techniques; cat paw, tiger paw and tse – planing.
Noodle Workshop 2: Pulling

Once you’ve mastered making the dough, now is time to master the art of noodle pulling. You will learn how to stretch and fold the dough to align the glutens and warm the dough for stretching.

Spend the day learning to master noodle dough and noodle pulling with XiaoFe Zu, owner of Dancing Noodle and Red River College alumni. The day includes all supplies, soup and appetizers, apron and your freshly pulled noodles.

Explore traditional recipes that are disappearing from menus in Rome, but being kept alive in homes. Chef Fabrizio Rosso will take us tasty culinary journey through Rome. The evening includes samples of 6 dishes and accompanying beverage.
